Pretty, festive looking, AND delicious!
1 package of sugar free white chocolate pudding
1/2 c cranberry vodka
1/4 c white chocolate liqueur
3/4 c skim milk
1 tub of fat free whipped topping
“sugared” cranberries (see below)
2 Tbsp white chocolate chips
Make the sugared cranberries first. Combine 3 tbsp stevia granular with 1/4 water and bring to a boil. Remove from heat and stir in half of a 12 oz bag of cranberries. Allow to cool for about 5 minutes. Spread 3 more tbsp of stevia granular on a baking sheet. Roll the cranberries in the stevia until coated. Allow to cool for about an hour.
With an electric mixer, mix together pudding, milk and both liquors. Fold in whipped topping. Spoon into small cups, top with sugared cranberries and chocolate chips and freeze overnight.
